Most unicorn cakes stop at a horn and some eyelashes. This one builds the whole rainbow into the cake itself. The lower tier is wrapped in ruffles that move from yellow through green and blue to lilac, and the top tier carries on in white and pink, so every slice is a different colour on the outside.
The unicorn head on top is shaped by hand, with a gold horn, closed eyes and a pastel mane, and gold stars are scattered down both tiers. A gold crown number shows her age, and her name goes on the board at the front.

Is the unicorn head on top edible?
Yes, it is made from fondant in our kitchen. It holds its shape well, so many families keep it as a keepsake for a day or two before eating it.
Can we have the unicorn cake in one tier?
Yes. On a single tier from 2kg we keep the unicorn head and the rainbow ruffles around the side and drop the upper white tier.
Is this cake only for girls?
Not at all. We have made it for twins and for boys who love rainbows. If you want it less pink, we swap the top tier to white and blue.
